

You may remember Chef Sam from when he represented Milford-on-Sea in the TV series Professional Master Chef a few years ago. He has recently returned to the village and is now the proud owner of La Perle.
As a young chef, Sam trained under Raymond Blanc, who continues to follow Sam’s career closely and has been a positive influence on him over the years. It was during his time spent with Monsieur Blanc that Sam developed his passion for seasonal dishes made from locally sourced produce.
The result can be seen in the menus, where everything is made from scratch in the restaurant, from the bread and butter to the ice creams and sorbets. The New Forest is a key source of many of Sam’s ingredients with over 90% of his produce sourced from sustainable suppliers in Hampshire and Dorset.
Head chef Sam is pleased to be returning to his roots, & the area where his family still live. He is setting up the business with the help of his brother Adam.
In his early career Sam worked at the award-winning ‘The Sir Charles Napier’ in Chinnor, Oxfordshire. He also has many years of experience working with some of the country’s finest chefs including Mark Broadbent at Mortons of Mayfair, Raymond Blanc at Le Petit Blanc, and Pierre Chevillard at Pebble Beach, following a 3 year apprenticeship in the kitchens of Kensington Place.

I have spent many hours tracking down small, ethical, sustainable suppliers with a great passion for their produce and 90% of our produce will be sourced from Hampshire and Dorset. I am always looking for new suppliers, foraged goods from the forest or fish from the sea. Please feel free to get in touch to talk about these things!
